This is the beginning of a book that I read recently
“Sweet Cherries and Sour cherries. Aphorisms, thoughts and words” written by Mogol (unfortunately only in Italian language).
An interesting book, full of thoughts and comments about life, and music …
It was written by Mogol (a world-famous italian music composer) and I think the name is enough to explain everything. They are evocative and unforgettable memories of the lyrics of the songs written for singer Lucio Battisti; he tells us about the present and the future without frills and trappings while being minimalist and essential.
The other day I found cherries at the vegetable market and while preparing gelato (ice cream) I reminded of this book that I recommend reading.
Here is the recipe …
300 gr. of sweet cherries without pits
100 gr. of sugar
200 ml. of milk
100 ml. of cream
10 gr. of milk powder
4 gr. of stabilizer
Measure milk and cream, pour sugar and cherries into pieces then blend well in a blender.
Add stabilizer and mix again, put the mixture in the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.
You can keep some cherries apart , cut them in half and add them to gelato at the end of creaming; in this case, put the fruit for a few seconds in infusion with liquor (Cognac, Maraschino or whatever you prefer) and then drain it well, it is the best way to keep fruit from freezing.
Let stand for about 1 hour in the freezer.
