“Cappucci del frate”

the other day, while we were walking downtown, we looked at the window of a famous chocolate store in Perugia and saw a packet of biscuits  totally unknown to us:

Piccoli Cappucci del Frate” (Friar Caps) , the sweets of St. Francis of Assisi.

It was since March 13, 2013 that I was wracking my brain to study a gelato recipe to devote to the new Pontiff,
Papa Francesco, and right in front of that window I had the idea  to create a gelato (home-made italian ice cream) with the same ingredients and the same flavor of the sweets.

Here’s the recipe:


1/2 l. of whole milk
125 gr.  of sugar (if available, replace 50 gr. sugar with dextrose)
65 gr. of liquid cream
15 gr. of milk powder
2 tablespoons 0f  hazelnut paste
2 tablespoons of cocoa powder
3 tablespoons orange juice
50 gr. of candied oranges


Mix all dry ingredients together, then add all the liquids and , after mixing well,  put everything in a saucepan and heat  up to 85 ° C with the help of a thermometer.

Allow the emulsion to cool down, in the meantime, turn the gelato maker machine on  and add the hazelnut paste.

Stir for about 30/40 min. or until you see a well mounted gelato, add the candied orange while the gelato  maker machine continues his work.

Let stand for about 1 hour in the freezer.

You can serve accompanied by the sweets, if you find them, maybe crumbled on top gelato.
