it’s been quite a while that I was studying this recipe and finally, after several attempts, I found a good combination of ingredients for the seaweed spirulina (Arthrospira platensis) gelato ( ice cream) .
For the uninitiated, Spirulina is an edible green-blue (due to the presence of chlorophyll) microalgae that grows naturally in lakes with very alkaline waters.
Spirulina is considered a complete food because it contains protein, minerals (iron, calcium, magnesium, potassium and selenium), vitamins B, A, C and E …
It s ‘a natural energizer that, unlike coffee, does not affect the nervous system and, if well-balanced, helps normalize cholesterol levels; it is also an excellent supplement for sportsmen and in low-calories diets in the form of tablets or, in powder, added to fruit juices, yoghurt, salads or, as in this case, gelato (ice cream).

Below is the recipe …
½ l. of milk
65 gr. of cream
125 gr. of sugar (if available, replace 50 gr. of sugar with dextrose)
15 gr. of milk powder
3 gr. of stabilizer
Pinch of salt
One vanilla pod
1/2 teaspoon of spirulina powder (up to 1 teaspoon depending on the desired color)
Mix all dry ingredients together and start stirring.
Add all liquids and, after a good mixing, pour everything in a saucepan adding one vanilla pod (cut length wise with a paring knife) and finally heat the mix up to 85 ° C (pasteurization) with the help of a thermometer.
Allow the emulsion to cool down, then add spirulina powder and mix well.
Turn on the gelato maker machine (ice cream maker) , add the emulsion and let stir for about 30/40 min.
Let stand in the freezer for about 1 hour .
