Mint Gelato

Mint Gelato (home-made italian ice cream)


Today I propose You my recipe for mint gelato (home-made italian ice cream), even if this is not a real gelato since  neither milk nor cream are present.
It ‘a mixture of sugar syrup in the right proportions flavored with fresh aromatic mint.
The leaves of this plant are plenty of  an active ingredient, menthol, which has calming and disinfectant properties; it also contains vitamin C, limonene, and antibiotic substances.
Here is the recipe:
500 ml. of water
120 gr. of sugar (if you have it available you can replace sugar with  50 gr. dextrose)
15 fresh mint leaves (+ some for garnishing )
4 gr. of stabilizer
1 teaspoon of mint syrup
Measure water and then pour it into a saucepan with sugar, stabilizer and mint leaves.
Put on the stove and bring to a boil, then let it cool down and strain through a fine mesh strainer.
Add 1 teaspoon of mint syrup (if  available) to intensify flavor, then put the mixture in the gelato maker machine and stir for at least 25-30 minutes.
When it is ready, put it in the freezer for at least an hour and …
