today I propose the pear sorbet; I used the “Williams” pear variety but you can use what you like best, the essential thing is to adjust sugar depending on fruit sweetness of the and , as always, you have to buy excellent quality ripe fruit !
The pear has very ancient origins: it is thought that it already existed in the ancient Rome and in more than 40 different varieties.
This number has greatly increased, so it’ s true that nowadays there are about a thousand varieties.
It ‘s a fruit rich in vitamins (A, B1, B2, C, E) and active principles (lignin, pectin, sorbitol …) that have particular benefits on our body: they help fight cholesterol, help the intestinal flora , promote the absorption of calcium …etc.
Here is the recipe:
Ingredients:
400 ml. of peeled pears
100 gr. of sugar
100 ml of water
4 g of stabilizer
a few drops of lemon juice;
Procedure:
Measure water and chop pears and then pour it in a blender with sugar (the quantity is indicative, everything depends on the ripeness and sweetness of the fruit itself), add the stabilizer and a few drops of lemon juice.
Blend everything until it becomes a puree, then put the mix in the gelato maker machine and stir for at least 25/30 minutes.
Remove the sorbet from the gelato maker machine and store it in the freezer for one hour.
