“Stracciatella” of Europe

Gelato “Stracciatella” of Europe,

home-made italian gelato (ice cream) with orange juice.

 

Welcome back,
as you already know, March 24, 2014 we celebrate the 2nd European Artisanal Gelato Day .

The event, created in Longarone  at the MIG (international gelato show) 2008,  was officially recognized by the European Parliament in Strasbourg  in July 5, 2012, as “among the dairy products, fresh artisanal gelato represents an excellence in terms of quality and food safety, which enhances the agro-food products of each member state.

This year, the official taste is the “Stracciatella of Europe” (plain milk gelato, with dark chocolate chips and orange juice), chosen in memory of the “Stracciatella” inventor Enrico Panattoni, who died in October, 2013.

Below is my personal interpretation of this taste, chosen to promote the 2nd Day of Artisanal Gelato production.

This Stracciatella “fruity” taste is very interesting, I strongly recommend it !

Ingredients:

400 ml. of milk
200 ml. of orange juice
70 gr. of cream
125 gr. sugar (if available , replace 50 g. of sucrose with dextrose)
15 gr. of milk powder (always choose top quality products here)
3 gr. of stabilizer
Pinch of salt
2 untreated oranges
80 gr. dark chocolate
1/2 cup of coffee Cointreau

Procedure:

Mix all dry ingredients together, then add the liquids and mix well and finally add an untreated orange rind (avoid the bitter white) cut in small pieces .

Put the mix in a saucepan and bring it ,over medium heat, up to 85 ° C with the help of a thermometer.

Let the emulsion to cool down, then strain it well and, in the meantime, turn the gelato maker machine on and let it cool.

Pour the mix in the gelato maker machine and let stir for about 30/40 min. or until you see get a well  mounted gelato.

Cut 2 oranges  in small pieces, let them soak in the liquor, then squish them and finally and add them to gelato while it is whisking in the gelato maker machine.

Chop finely the dark chocolate and slowly add it to the mixing gelato when you see that gelato is almost ready.

When You see a well mounted gelato, just remove it from the basket and let it sit for  about 1 hour in the freezer.

Composition:

I took a spoonful of orange with Cointreau and I used it as the basis for the cup, I added the gelato and sprinkled with a little chopped dark chocolate with orange and some decoration
