Today I propose you my recipe for kiwi gelato.
This fruit has originated in China, but now Italy is the leading producer.
In addition, kiwi fruit is rich in vitamin C and antioxidants, much more than citrus.
I recommend, as always, to choose ripe fruit because otherwise gelato will taste very sour.
Here is the recipe:
300 gr. of kiwi fruit cut into small pieces
110 gr. of sugar
200 ml. of milk
100 ml. of cream
10 gr. of milk powder
4 gr. of stabilizer
Measure milk and cream, pour sugar and kiwi pieces and blend everything well in a blender.
Add stabilizer and mix again, put the mixture in the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.
Let stand for about 1 hour in the freezer.
