White chocolate Gelato (home-made italian ice cream)



Welcome back,

here is  a very tasty and versatile white chocolate gelato recipe.

This type of chocolate is a derivative of  chocolate processing and is composed of sugar and cocoa butter; white chocolate has a color that is close to ivory and a texture that resembles that of milk chocolate.

Here is the recipe:


½ l. of milk
80 gr. of white chocolate
30 gr. of cream
40 gr. of sugar
10 gr. of milk powder
3 gr. of stabilizer
Pinch of salt
1 egg yolk (optional)


Mix all dry ingredients together, then add the egg yolks while continuing to stir.

Finally, add the liquids and after mixing well put the mix  in a saucepan and heath gently up to 85 °C with the help of a thermometer, then add the white chocolate and let it melt down.

Let the emulsion to cool down , meanwhile turn on the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.

Let stand for about 1 hour in the freezer.

To accompany this gelato you can use biscuits, wafers of your choice (if needed check for gluten-free products!!), or, as you see in the picture, hazelnut praline crumble.
