I consider this time of year the most sad and gloomy, so what could be better than a good gelato in memory of the last summer tasted in front of the fireplace? … with your lover of course!
½ l. of milk
50 gr. of cocoa (for a more intense flavor replace 20 gr. with fondant)
40 gr. of liquid cream
2 tablespoons of sugar
15 gr. of milk powder
3 gr. of stabilizer
Pinch of salt
1 egg yolk (optional)
2 Kirsch tablespoons
2/3 cherries in liqueur for each gelato cup
Mix all dry ingredients together, then add the egg yolk while continuing to stir.
Finally add the liquids and the 2 tablespoons of Kirsch liqueur, and then, after mixing well, put the mix in a saucepan and heat gently up to 85 ° C with the help of a thermometer.
Allow the emulsion to cool down , in the meantime, turn the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.
Let stand for about 1 hour in the freezer.
Take a glass or a cup and fill the bottom with the cherries with their liqueur , then put over 2 or 3 scoops of gelato topping with chocolate Kirsch.
Decorate with cherries.
You can replace the Kirsch with Brandy or Sherry, according to your taste.
