Lactose free Coffee Gelato

Lactose free Coffee Gelato (home-made italian ice cream).

 

Coffee is a popular drink in the world, with different flavours and characteristics sometimes far  from what we are accustomed to drink  in Italy with moka, not to mention espresso coffee …

Every time I go on holiday abroad my main problem is precisely that of not being able to drink a good cup of coffee …

I try, but often with bad results …

Below is the recipe for lactose free coffee gelato.

Ingredients:

300 ml. of  rice milk
150 gr. of vegetable cream
125 gr. of sugar (if available replace 50 gr. of sucrose with dextrose)
3 gr. of stabilizer
Pinch of salt
2 teaspoons of  instant coffee (or 2 cups of strong espresso)
2 egg yolks

Procedure:

Mix all dry ingredients together, then add the egg yolks while continuing to stir.

Finally add the liquids and, after mixing well, put the mix in a pot and heat gently up to 85 ° C with the help of a thermometer.

Allow the emulsion to cool down , then filter any lumps of instant coffee.

Turn on the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.

Let stand for about 1 hour in the freezer.
