350 ml. of milk
90 gr. of liquid cream
125 gr. of sugar (if available replace 50 gr. sucrose with dextrose)
10 gr. of milk powder
200 gr. of mascarpone (mild creamy cheese)
3 gr. of stabilizer
Pinch of salt
3 egg yolks
2/3 tablespoons of rum (optional)
White Chocolate chips
3/4 strawberries for each cup
Mix all dry ingredients together, then add the egg yolks while continuing to stir.
Finally add milk, cream and rum and, after mixing well, put the mix in a saucepan and bring to 85 ° C with the help of a thermometer.
Allow the emulsion to cool down and add the mascarpone cheese while stirring again.
Meanwhile turn on the ice cream maker machine and stir for about 30/40 min. or until you see gelato (ice cream) well mounted.
