“Stracciatella” Gelato

“Stracciatella” Gelato (home-made italian ice cream)


Welcome back,

the taste of this gelato (ice cream) is among the most appreciated ones in every season by both, adults and youngsters.

You can use 50% dark chocolate, the dark one  that is the commonly available in every  market and is used in pastry, or instead, if you want a ‘strong’ taste,  70% dark chocolate,  the choice is yours …

Below you will find the recipe for gelato ( ice cream) “Stracciatella”.


 ½ l. of milk
65 gr. of cream
125 gr. sugar (if available, replace 50 gr. of sugar with dextrose)
15 gr. of milk powder
3 gr. of stabilizer
Pinch of salt
One vanilla pod (optional)
80 gr. of dark chocolate


Mix all dry ingredients together, then add the liquids and mix well, then add half vanilla bean and the seeds thereof.

Put the mix  in a saucepan and  moderately heat up to 85 °C with the help of a thermometer.

Allow the emulsion to cool down while , in the meantime, turn the gelato (ice cream) maker machine on, pour in the mix,   and stir for about 30/40 min. or until you see a  well mounted gelato (ice cream).

At this point, quite finely, chop the  dark chocolate and incorporate it in the gelato (ice cream), continuing to stir, the remove it from the basket and let it sit for about 1 hour in the freezer.

You can decorate with chocolate chips or your favourite topping.
