Today I propose a recipe for gelato with nuts.
This is a particular taste, prepared by adding hand-made shredded nut brittle to whipped gelato, hand-made by me, which gives gelato a truly unique flavor!
Unfortunately I can’t give you the right doses to prepare nut brittle since I go, as they say, …. by eye!
Here are the ingredients: use sugar, a pinch of salt, a few drops of lemon juice and butter.
Put everything on low heat in a pan and let caramelize, when ready add the dried fruit, in this case the nuts, and mix well, then, slowly, lay over a sheet of baking paper and let cool to room temperature.
Below is the gelato recipe …
Ingredients:
½ l. of milk
65 gr. of liquid cream
125 gr. of sugar (if available, replace 50 gr. sugar with dextrose)
15 gr.of dried milk
3 gr. of stabilizer
Pinch of salt
80 gr of nut paste
small pieces of nut or nut brittle
Procedure:
Mix all dry ingredients together, then add milk and cream, and, after mixing well, put everything in a saucepan and heat up to 85 ° C with the help of a thermometer.
Allow the emulsion to cool down, then add the nut paste, stirring constantly.
Turn on the gelato maker machine and stir for about 30/40 min. or until you see a well mounted gelato.
At this point add nuts or broken nut brittle and stir for another minute .
Let stand for about 1 hour in the freezer.
I decorated with bits of nut brittle prepared almost at the moment …
