Soft fruit sorbetto

I’ll be repetitive, but the berries for me are the parsley in pastry …

When I have no ideas on how to end the meal in whichever occasion, I invariably jump off the berries as an ingredient from which to start a new recipe.

They are colorful, good to eat (even with your eyes!) and, especially, rich in vitamins and antioxidants.

Also, if you use frozen ones, they are very practical and I think you should always keep some in your freezer.

Below is the recipe …


250 gr. of berries (if you can not find it fresh then  you can use frozen ones)
200 gr. of sugar
500 ml of water
4 gr. of stabilizer
few drops of lemon



Measure water, then pour sugar and berries; blend well in a blender and strain through a fine-mesh strainer.

If available you can replace 2 gr. stabilizer with 2 tablespoons of berries fruit paste (intensifies flavor).

Add stabilizer and mix again, put the liquid into the gelato maker machine and stir for at least 25/30 minutes.

When sorbetto is ready, put it in the freezer for at least an hour and  …
