Chocolate surprise

Hello ,

You might already know that my name is Valentina.

This year I decided to celebrate  Valentine’s day with a  special recipe, so “hot” You’ll not be able to resist it :

hot chocolate cake   accompanied by creamy vanilla gelato (home-made italian ice cream) and flavored with hot pepper oil.

Ingredients for the cake (dose for two):

75 gr of dark chocolate
40 gr of butter
45 gr of sugar
15 gr of flour (I replaced it with gluten-free flour)
1 egg + 1 egg yolk
vanilla or vanillin
butter and cocoa powder to line the molds.

 

Procedure:

First of all chop the chocolate and place it in bain-marie to melt it with the butter.

Meanwhile, in a planetary mixer, break the egg and add the yolk and mix with sugar and vanilla (You can also use an electric mixer) until it becomes frothy.

At this point add melted  chocolate and butter , then add the flour, stirring constantly.

As I said I used gluten-free flour to let Alessandra, our team  member, who is celiac, to taste and evaluate the cake.

Turn on the oven and bring  temperature to 180 °C, grease molds with butter and coat with flour and cocoa powder.

Put the mixture into the molds leaving  about 1.5 cm of free space from the edge and place in the oven for 13/15 minutes.

Always cook only one first to assess the degree of cooking of your oven; each oven is different from the other.

These cakes are great to keep in the freezer for unexpected guests, consider 2/3 more minutes of cooking .

Vanilla Gelato

Ingredients:

½ l. milk
65 gr. + 100 ml liquid cream
125 gr. of sugar (if available, replace 50 gr. of sugar with dextrose)
15 gr. of milk powder
3 gr. of stabilizer
Pinch of salt
Vanilla

 

Procedure:

Mix all dry ingredients together, then add the liquid and mix well after adding half  vanilla bean and seeds thereof.

Put in a saucepan  and heat to 85 °C with the help of a thermometer.

Allow the emulsion to cool down, in the meantime, turn the gelato maker machine and add 100 ml of cream.

Stir for about 30/40 min. or until you see the well mounted Gelato.

Let stand for about 1 hour in the freezer.

 

Composition:

Take a deep dish (which You previously kept for about 10 minutes in the freezer) and arrange the cake in the center, next 1 or 2 Gelato balls .

Add some petals of red rose as decoration .

Pour a few drops of hot pepper flavored Ronci olive oil and taste this really tasty and surprising  combination!
